Tart, sweet and crunchy fresh green mango salad recipe from Vietnam and Cambodia.
After a visit to Vietnam and Cambodia, Chef Sam Dara from Angkor Village Botanical Resort, let me in on the recipe that I’d been eating throughout Southeast Asia, green mango (and sometimes green papaya) salad. Add peanuts or cashews at the end or any fresh raw veg.
I don’t mention quantities in the video, so about a whole unripened mango, 1 carrot, 1/2 onion or a whole shallot, add a few sprigs of mint and then dressing. Dressing can be a few tablespoons of fish sauce, vinegar and sugar mixed together or here I used, 70g oyster sauce, 20 g soya sauce and 30g sugar. Add to taste, for me it’s just a couple of tablespoons with some lime juice at the end.
